As promised...
-----------------------
Whole Wheat Beer Bread
1 1/2 cups all-purpose flour (I used white bread flour)
1 1/2 cups whole-wheat flour
1 Tablespoon and 1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1/3 cup packed brown sugar
1 (12 oz) can or bottle of beer (room temperature)
1 Tablespoon honey*
1. Preheat oven to 350 degrees F. Lightly grease a 9 x 5
inch loaf pan.
2. In a large mixing bowl, combine flours, baking powder,
salt, & brown sugar. Pour in beer & honey and stir until
a stiff batter is formed.** Scrape dough into prepared loaf
pan.
3. Bake in preheated oven for 50 to 60 minutes, until a
toothpick inserted into center of loaf comes out clean.
---------------------------------------- ----
* This measurement is a "guesstimate" on my part - the original recipe didn't call for honey, but I added it after tasting the dough while mixing the flour mixture & beer together.
** Dough will be wet & sticky - you can add a little more flour if you wish, but in my experience, even with wet, sticky dough the bread ends up a little crumbly. The finished loaf will be textured on top.
